This chickpea salad is not like chicken salad or egg salad. It’s a salad all its own. It’s creamy, tangy, and refreshing. As a sandwich filling or side dish, it’s the perfect lunch to bring to work or whip up at home at the last minute.
Chickpea Salad

Ingredients
- 1/4 cup celery
- 1/4 cup carrots
- 3 tbsp red bell pepper
- 2 tbsp red onion*
- 1 radish
- 1 dill pickle
- 1 cup chickpeas**
- 2 tbsp mayonnaise (vegan or regular)
- 1 tsp dijon mustard
- 1/2 tsp lemon juice
- a pinch dill
Instructions
- Mash the chickpeas in a medium bowl.
- Dice the vegetables and add them to the chickpeas.
- Add the dijon mustard, dill, lemon juice and Mayonnaise, and mix all of the ingredients.
Notes
*Can be replaced with green onion.
**Canned or previously cooked dry chickpeas.
