Chickpea Salad

This chickpea salad is not like chicken salad or egg salad. It’s a salad all its own. It’s creamy, tangy, and refreshing. As a sandwich filling or side dish, it’s the perfect lunch to bring to work or whip up at home at the last minute.

  • 1/4 cup celery
  • 1/4 cup carrots
  • 3 tbsp red bell pepper
  • 2 tbsp red onion*
  • 1 radish
  • 1 dill pickle
  • 1 cup chickpeas**
  • 2 tbsp mayonnaise (vegan or regular)
  • 1 tsp dijon mustard
  • 1/2 tsp lemon juice
  • a pinch dill


  • Mash the chickpeas in a medium bowl.
  • Dice the vegetables and add them to the chickpeas.
  • Add the dijon mustard, dill, lemon juice and Mayonnaise, and mix all of the ingredients.


*Can be replaced with green onion.
**Canned or previously cooked dry chickpeas.
